Mojito by the Pitcher Recipe ala Bewley

On a hot summer day there not much better than an ice cold mojito, except maybe a whole pitcher. Here's my recipe for a tasty party.

Add to an empty pitcher:

  • 1 Tbs sugar for friction
  • 30 or so mint leaves

Muddle and add:

  • 1 lime quartered, squeezed into, and dropped into pitcher

Muddle some more and add:

  • 3/4 cup simple syrup*
  • 3/4 cup lime juice (fresh squeezed is essential!)
  • 2 cup rum

Stir to mix. If you are making ahead of time, stop here, cover the pitcher, and place in the fridge.

Just before serving add:

  • about 2 cups ice
  • 4 cups club soda (1 litre bottle)

Pour into ice-filled highball glass. Garnish with a sprig of mint.

* Simple syrup is equal parts sugar and water brought to boil. Make ahead of time and add a couple mint sprigs and let it steep in the fridge.
